SEARED DIVER SCALLOP
sea urchin, cauliflower, brown butter
Steig Larsson, the Skarsgårds, and Ikea- what more do I ask of Sweden? Apparently, more Swedish gems like Aquavit in New York. Let’s not fool ourselves into thinking that we’ve had a taste of Nordic cuisine before just because we processed Ikea’s horse meat through our system at least once.
So here it goes- I absolutely loved it. The night began with the biggest tease of all, a complimentary Chilled Sweet Corn Soup. It was crisp, it was savory, and most of all well balanced (overused, I know). Herring had the oceanic pinch you need but with Gravlax I felt it was a bit overshadowed by the frozen shaved foie gras. Icelandic Cod not pictured, but the surely the langoustine, sunchoke, caramelized almond and an exceptionally pudgy cod combination was enough to put it on top.
It was an exotic fare, a memorable one. I’m counting the days until I go back to try the tasting menu.
* Amazing props to Marcus Jernmark, the genius behind the curtains (thank you Brian for pointing it out!)
